Psoul is a little van with a big mission: To make you feel better than ever before, through delicious food.

We know that plant-based food has the power to transform your life so you can truly thrive. Founder Nazy Jaan went from depressed and completely lacking in energy to getting up at 5.30am with a renewed hunger for life, and losing 22lbs. Having seen the transformative effects of the fuel we put into our bodies, she wants to help everyone feel limitless. Her motto is "If almonds can be milk, you can be anything."

Ingredients:
Almond layer
160ml oat or almond milk
1 tbsp almond butter
1 tbsp vanilla oat yogurt (optional)
1 tbsp maple syrup
30g chia seeds

Chocolate later
160ml oat or almond milk
1 tbsp cacao powder
1 tbsp maple syrup
30g chia seeds

Method:
For the almond layer, whisk all the ingredients except the chia seeds together. Alternatively blitz in a blender.

Empty the mixture into an overnight container and stir in your chia seeds. Set aside.

For the chocolate layer, wash out the blender and repeat the same process.

Put both in the fridge overnight.

In the morning, layer up your serving bowl or cup with alternating layers of mixture.

Top with berries, chocolate chunks or granola. We used our in-house vegan twix car for a caramel and shortbread delight.
